Everything became closely regulated including the harvest of the fresh tea leaves. In the Imperial Gardens, drums and cymbals were used to coordinate the tea pluckers during the chilly pre-dawn hours when the new shoots would open. The tea pickers had to be chaste young maidens and were required to undergo special training to learn the proper tea plucking technique. For example, the girls were required to keep their fingernails at a precise length so they could snap the tea leaf without bruising it with their fingers. Because this prized tea was such an expensive a commodity at the time, the tea gardens required strict security. As such, the tea pluckers wore bright identification labels so thieves could be readily identified if they tried to gain access to the tea. The freshly picked tea leaves were graded into classes and processed with the best grades of tea going directly to the Emperor himself.
